Essentia's Tatami is the only mattress I've tested that uses certified organic memory foam. Made from hevea milk (natural rubber tree sap), it provides the conforming sensation of memory foam without petroleum-based chemicals. The difference is tangible β no chemical off-gassing whatsoever.
At $3,390, this is among the most expensive mattresses I've tested. The price reflects genuinely rare materials and handcrafted Canadian manufacturing. Each mattress takes about 8 hours to produce by hand, which is extraordinary in an era of automated production.
The zero-VOC (volatile organic compound) certification matters for chemically sensitive individuals. I tested with a VOC meter and confirmed negligible emissions, compared to measurable readings from conventional foam mattresses. For people with MCS (Multiple Chemical Sensitivity), this may be the only tolerable option.
Sleep quality is excellent β the organic foam conforms well and the natural rubber base provides durable support. Cooling is better than conventional memory foam thanks to the natural materials' open-cell structure. The 120-night trial and 20-year warranty are appropriate for the price.
Essentia's 'Beyond Organic' philosophy β what founder Jack Dell'Accio calls Organic Performance β is the framework behind the whole line: the idea that a mattress shouldn't just be made from cleaner materials, but engineered to actively support recovery. That now includes EMF Protectionβ’ Foam, an optional upgrade built with informed quartz that Essentia has rolled out across every mattress it makes, from the Grateful Eight down to the Lala crib mattress. It's a genuinely unique offering β no other mattress brand addresses EMF exposure at the sleep surface β and for buyers who are already shopping organic for health reasons, it's a logical add-on.
The ecosystem around the mattress has expanded too. Essentia's Align X is an adjustable foundation built around incline sleep rather than treating it as an afterthought β up to 7 degrees of full-bed tilt plus 7 inches of height adjustment, so side and stomach sleepers can rest head-elevated for easier breathing, which most adjustable bases can't do. Essentia's core trick is a slow-response foam made from natural rubber latex rather than polyurethane β it contours and relieves pressure like memory foam but carries organic certifications and skips the petrochemicals and their off-gassing.
