Three inches of five-zone natural latex over recycled-steel pocketed coils is a genuinely different feel from the Classic's foam-and-coil euro top: buoyant rather than cushioned, and it pushes back instead of letting you settle in.
Read the certification language carefully, because Saatva's own wording is precise and most write-ups are not. The latex is organic-certified, the New Zealand wool is certified organic, and the cover is a blend that includes organic cotton. That is not the same as a certified-organic mattress, and we do not describe it as one.
Practical considerations matter more here than on a boxed bed. It arrives by white glove delivery with in-room setup and free removal of your old mattress, so the 12-inch, roughly 100-pound queen never has to be wrestled up a staircase. Latex recovers its shape almost immediately when you move, which is why this bed feels buoyant where a memory-foam hybrid feels cushioned. Practically, that means easy repositioning and no sensation of being held in place — and, as the flip side, less damping of a partner's movement.
The zoning is firmer through the lumbar section, which is the part of the bed that carries most of your weight when you lie on your back. Combined with the pocketed coil unit underneath, that is a construction aimed at keeping hips level rather than at maximising cushioning. Organic components versus an organic mattress
Saatva states that the latex is organic-certified, the New Zealand wool is certified organic, and the cover is a soft blend that includes organic cotton. The mattress also carries GREENGUARD Gold and eco-INSTITUT certification for emissions. Those are component and emissions certifications.
They do not add up to a certified-organic finished mattress, and we do not describe the Latex Hybrid as one. If whole-product organic certification is your requirement, that is a different search — this bed is a natural-materials hybrid with certified components and low-emissions testing behind it.
Temperature, and why wool matters more than marketing
Latex is an open-structured material, the pinhole ventilation adds pathways through the comfort layer, and the coil unit keeps air moving under it.
